LaBrezza at St Regis Singapore: Domenica Italiana Weekend Brunch


Picture warm and wonderful family weekend feasts, with food lovingly cooked by grandmothers, dads or cousins. Everything is generously laid out, and the food just keeps coming.

Armando Aristarco, Chef de Cuisine at LaBrezza, St Regis Singapore, wants to recreate the spirit of such bountiful weekend feasts with Domenica Italiana.

It's a real feast indeed, and we easily spent five hours over prosecco and mirthful conversation.







Here's what the feast entails:

Antipasti

The excellent antipasti is served tableside, so you don't have to move a finger.
• Octopus Salad with Celery, Black Olives and Lemon Dressing
• Traditional Eggplant Parmigiana
• Frittata with Potato and Truffle
• Crispy Garlic Bread with Tomato and Oregano
• Buffalo Mozzarella and Parma Ham
• Beef and Veal Meatballs in Tomato Sauce

Oh good gnocchi is such a godsend. I love the yielding yet gently chewy texture of these potato dumplings.



Chef's Surprise: Artichokes
We also had a Chef’s Surprise dish - beautiful artichokes!

Deep-fried Seabass, Pickled Vegetables “In Carpione”
Oh I chose this and didn't regret it one bit. The seabass was piping hot, crisp on the outside, and flaked beautifully when you put a fork in it. The sweet flesh went well with the lightly pickled vegetables. Carpione seems to refer to a Piedmont cooking method; it's a quick pickling technique in vinegar, salt, sugar, white wine and olive oil.

This looked really good too. I'm a red meat girl but I was most happy with my fish.

This is the vegetarian choice, made quite substantial by the deep-fried mozzarella patty.






Cheese Platter

Enjoy a selection of four cheeses served tableside - Taleggio, Pecorino Sardo, Gorgonzola, and Robbiola.



Deconstructed Tiramisu

Ever wanted a tiramisu that is done exactly how you want it? Extra coffee strength? Extra cream? Less cocoa powder? You can construct your own just the way you like it with

DIY Tiramisu
I made my own! Lots of everything. It tastes extra good when you have fun putting it together.



Desserts 

Desserts at LaBrezza's Domenica Italiana
Chef Armando brings us traditional sweets from his own childhood. The treats include Baci di Dama, Amaretti, Chocolate Millefeuille, Torta Paradiso, Cannoli, Salame di Cioccolata, Tiramisu,  Panna Cotta, and Chef’s Surprise. See first photo for the full dessert table.




The prosecco we had

The Domenica Italiana happens Saturdays and Sundays, 12noon to 3pm.
$88++ per person with coffee and tea
$118++ per person with Prosecco, wines, beers, soft drinks and juices
$138++per person with Franciacorta, wines beers, soft drinks and juices
