1-Michelin Star Summer Pavilion (Ritz-Carlton, Millenia Singapore) S$148 Tasting Menu

Summer Pavilion, the Cantonese restaurant at Ritz-Carlton, Millenia Singapore, has once again earned a one Michelin-star rating. It is rolling out a celebratory tasting menu that's thoughtfully planned and well-executed. Almost all the courses featured premium ingredients and it was hard to find fault with any of them.



Smoked Australian Abalone, Assorted Sautéed Mushrooms, Golden Syrup Sauce
Abalone is not an easy meat to get right; all too often it ends up on the rubbery side. But now I can safely add Summer Pavilion to the list of restaurants that manage to get the texture right. The delicately smoked flavours go well with the insanely delicious mushrooms.

A Cantonese restaurant has to do soups well and Summer Pavilion doesn't disappoint. We were intrigued by the interesting addition of nostoc algae (the little dark brownish-green petals floating in the soup).

One bite and you can tell this is the real-deal wagyu from Japan, not the mixed breeds from Australia or US. It's so divinely tender and flavourful. The bread I had thought was omelette, due to the strong yellow. Egg would work well too, but the tangy hint of tomato probably helps to cut through the fatty flavours.

The lobster is cooked just right; it's firm, juicy and lightly seasoned. The truffle sauce complements it pleasantly without being overpowering.

This was surprisingly my favourite out of all the dishes. The fish broth is exquisite and so comforting when paired with poached rice. Perhaps atas fish porridge? Well, when you put in quality ingredients, you get a totally amazing dish, no matter how simple or humble it seems.

I think a lot of work went into the three different elements but you get something that's warm, something cold and something crunchy. Interesting contrast, but portion sizes are perhaps a little too dainty.

Chinese Executive Chef Cheung Siu Kong has done well with this menu. You have abalone, wagyu, and lobster as highlights but each course has its own appeal.

The Tasting Menu is available until 30 September 2017 at S$148++ per person. A wine pairing option is available for an additional S$68++.
