Yun Nans Restaurant Opens Third Outlet at NEX Serangoon

Yun Nans has opened its third outlet at NEX on 23 September 2020. Known in China as 云海肴 (pronounced as “Yunhaiyao”), YUN NANS is the largest Yunnan F&B chain in the world, with over 200 outlets in China. On Dazhong Dianping, the restaurant is rated as one of the must-visit places in Kunming, southern Yunnan.

YUN NANS Interior - NEX The restaurant serves highland cuisine (gao yuan liao li) and I've been hearing raves about it, so it's not surprising that it's doing well and expanding. I'm glad this NEX outlet is much nearer to me than the Jewel at Changi Airport (flagship) and Westgate one. And there's a promo going on, so I might check it out.

Jia He Chinese Restaurant at One Farrer Park Connexion: Dining Promotions

Jia He Chinese Restaurant is popping up on the radar of foodies for some of its dishes. They caught my attention with this very attractive promo going on until 30 Sept 2020.

To commemorate Singapore’s 55th Birthday, they are offering a 30% discount for their Lunch and Dinner a la carte menu for both dine-in and takeaway/delivery (with free delivery for orders above S$50).

On top of that, dine-in customers with a spending above S$100 per table (after the 30% discount, so approximately a S$150 spend) will get a free Signature Peking Duck (priced at S$55++ on their menu). Takeaway/delivery customers with a similar minimum spending of $100 (after discount) will get a the Signature Roasted Duck (priced at S$68++) instead of Peking duck, because it travels better than the Peking duck which really needs to be a dine-in experience.

ATLAS Singapore Launches New Gin Experiences

Who has not been wowed by ATLAS and the much acclaimed 8-metre tall Gin Tower? This grand Art Deco marvel of a bar and restaurant graces the ground floor of one of Singapore’s most iconic buildings, Parkview Square. It's also home to one of the world’s largest and most extensive gin collections, and has launched a series of exciting one-of-a-kind experiences and updates.

The Personal Gin Tower Experience (S$42)

This is perfect for both gin aficionados or guests making their first foray into the world of the juniper spirit. Hosted by ATLAS' Head Bartender (Jesse Vida of Dead Rabbit and Blacktail fame), or one of the Senior Bartenders, guests are invited to ascend the stairs to the iconic Gin Tower for a personal tour to handpick a gin of their choice.

Guests will venture across the globe as they explore new flavour profiles and lesser-known distilleries and gin iterations that can be only found in Singapore at ATLAS.

Gin Tower Experience_1 - Photo Credit: Benjamin Sim The experience continues with a bartender led tasting and presentation of the gin of choice. Guests will enjoy a customised gin and tonic pairing to conclude. Priced from S$42 per guest, this experience is best enjoyed in a pair.

Gins of the World (S$48)

ATLAS has introduced Gins of the World, to delight guests with a world discovery gin flight. Each month, guests can anticipate three unique gins from different areas of the world, explore the diversity of flavours and discover the storied histories on a liquid journey.
World Flight - - Photo Credit: Benjamin Sim
This month discover South America and its native botanicals from the Amazonian forest with different expressions selected from Peru and Columbia featuring botanicals including sacha inchi, trujillana and tonka beans, of which one is aged in rum-barrels. Priced at S$48, the flight includes three gins which are complemented with a selection of garnishes, soda water and tonic.

ATLAS Gin Collection – Taxonomy of Taste

It took five years to curate the ATLAS Gin Collection of over 1,400 gins and it includes some of the world’s most-loved and sought after labels.

The gin menu is now presented as a unique index to support the exploration of the wonderful world of gin whilst highlighting each gins’ key botanicals. The gins of ATLAS have been arranged into their distinct style categories, such as Modern, Barrel-Rested and Navy Strength. Each category is further subdivided into the ATLAS Taxonomy of taste; a guide of ten different flavour profiles such as floral, earthy, nutty and spiced, to make the selection process as seamless as possible for guests.

With a focus on education, the ATLAS Gin Collection also guides guests to choose the most suitable tonic, with a selection of pairing options available for browsing.

Morganfield's Bourbon Bacon Sticky Bones

Morganfield's latest offering for Sept-Oct 2020 is music to my ears - Bourbon Bacon Ribs!

The chefs have spiked the sweet and tangy classic American barbecue sauce with Jim Beam bourbon to give the signature spice rubbed ribs a richer and more complex flavour. The full slab is topped with hand-chopped bacon bits and two strips of Bourbon Candied Bacon, and served with Potato Salad & Grilled Corn on Cob. It is a feast for two (Sticky Bones S$49.90++ and Baby Back Ribs S$39.90++).

Bourbon Bacon Sticky Bones
And yes, Candied Bacon (S$11.90++) - see glass tumbler full of them perched on the plate above - you can have a half dozen or so strips as a side dish. These are soaked in bourbon for hours, before being caramelised. The concept is marvellous, but you can still taste sugar crystals sprinkled on the bacon. I think it might be better to brush sugar in syrup or liquid form onto them before baking in order to get that molten hardened candy effect. So we gave that feedback - I don't know if this will be relayed to the chefs for experimentation.

Ale and stout to go with sticky bones
If you'd like to pair even more booze with your ribs, there are a couple of choices that go really well. On the left, you have Rogue Hazelnut Brown Nectar which is sweet and nutty with an acidity that balances out with the fatty meat of the ribs. On the right, we have North Coast Old Rasputin Russian Imperial Stout which is rich, strong and roasty with a warming finish. The roasty aspect and the tangy sauce on the ribs are perfect for each other.

The ribs are truly a gorgeous treat. However, if you feel like staying in or want to cater for a party, Morganfield's does takeaway and delivery

Crystal Skin Durian Mini Mooncakes from Chui Lau Heung

I have a really unusual find to showcase. Chui Lau Heung, a local brand that's apparently been successful in Hong Kong for durian mooncakes, has come up with crystal skin durian mini mooncakes. Yes, crystal skin, just like the 水晶包 crystal dumplings. The skin is translucent, delicately chewy and stretchy, totally outdoing their snowskin mooncake cousins.

There are two varieties, both featuring decadent Mao Shan Wang durian puree, but one has a special "molten" core. They come frozen, so you'll need to thaw them for about 10-20 minutes. but you can be creative and torch them for a warm skin and cold centre experience.

We found that the molten core one didn't really flow like molten lava, so do adjust your expectations. It also tasted like some sort of durian diluted with honey, so the durian taste is not as strong. Naturally, we leaned more towards the regular one, as the durian taste was more intense and unadulterated.

Prices (box of 6 mooncakes) as per website: S$42 for molten core, and S$60 for the regular crystal skin mooncakes.

  Chui Lau Heung products
They have other products as well but the crystal mooncakes are the highlight. The durian products have very decent filling and smell good. The D24 durian bao is also frozen, so you can keep and enjoy at any time, even when durian is off season. The siew mai is vegetarian, which is good for people choosing not to eat meat, but seriously, you can't beat pork for siew mai.

Last point: I'm not fond of the packaging design myself, but someone from another culture liked the box, so you never know. I was happy to give it to her.

How to Cook Bird's Nest Soup In 3 Easy Steps (Plus $30 OFF Promo Code)

I've always put off making my own bird's nest soup because I keep hearing about the laborious cleaning process - repeated soaking, tweezing out feathers, and so forth. It wasn't until CS Bird's Nest (hey wow, they got a nice domain name - birdnest.com.sg/) approached me recently that I decided to consider. Apparently cleaning is not required!

CS Bird's Nest is an AVA/SFA licensed importer and have been in the business for seven years, with its own swiftlet bird houses in Malaysia and Cambodia, as well as having their very own processing facility to control the quality.

Their bird's nest is purportedly bleach-free, chemical-free, UV-sterilised, handpicked and hand-cleaned manually, and dried at room temperature (excess heat may destroy nutrients).

But wait, from them, I found cooking the bird's nest is easy as 1-2-3. So foolproof. Maybe it's been like this for a long time, and I've only just discovered, but hey, better late than never.
