Sabio by the Sea - A Spanish Weekend Brunch by the Marina at Quayside Isle

I had this brunch some time ago but I remember it like it was yesterday. It was great fun with a whole bunch of blogger friends. Then everyone started posting, and the same dishes were popping up everywhere. So I decided to stagger my coverage for later, so it would not be overkill. Then weeks crept into months (yikes!), but I suppose better late than never. It's still a great weekend brunch, and I have to tell you that the best churros are here!

Sabio by the Sea is the extension of Sabio at Duxton Hill (both under the Deliciae Hospitality Management Group which also includes L'Entrecote, &Made and Forlino, to name a few).

This Spanish tapas bar and grill faces the lovely Sentosa Marina at Quayside Isle. Like at its sister restaurant, there are hand-painted Catalan tiles and hand carvings inspired by a 200-year old bar in Seville.

At both restaurants, there is a signature long bar. Here, bright red stools ad a pop of colour to the neutrals. The vibe is casual and laid back, and the open space feels spacious and airy.

I really like the dramatic white antler lighting fixtures. What beautiful chandeliers they make.

But let's get down to brunch. With a Josper grill monster oven in the kitchen grilling and roasting all the food by intense charcoal heat, the food is bound to have a different touch.

Here's the weekend brunch menu below (click to see larger version).

On weekends, a mere S$35 gets you the El Sabio basket of breads and croissants, along with a glass of juice, yoghurt with berries and jam, plus a hearty main course. And a hot drink (coffee/tea) to cap it all off.

Here's the El Sabio Basket with scrumptious croissants and awesome breads. Have a Sangria (the white one is particularly refreshing) if you are so inclined.

Plain yoghurt with raspberries
Oh the smooth and tangy yoghurt with berries...there is nothing plain about this!

Fluffy Omelette, Roasted Potatoes , Manchego Cheese, Serano Ham, Basil And Grilled Cherry Tomatoes
Fluffy Omelette, Roasted Potatoes , Manchego Cheese, Serano Ham, Basil And Grilled Cherry Tomatoes is one of the mains you can choose. As you can see from the ingredients, it's a very filling omelette, served in an iron skillet that helps to keep it warm. The whole ensemble may be a tad greasy for some, but savour it slowly and stretch it out for a leisurely brunch.

If you prefer something simpler, go for the Grilled Olive Bread stuffed with Manchego Cheese and Serrano Ham. This is no ordinary ham and cheese sandwich for sure!

Bigger appetites will appreciate the Grilled Ribeye (120g) with Chachouka, Fried Egg And Grilled Mushrooms. Oh yeah, it's all beef underneath the fried egg!

Chachouka (also known as Shakshuka) is of Tunisian/North African origin - often a tomato and pepper stew with eggs. Here they've added zucchini as well.

El Pulpo – Grilled Octopus leg, “Viola” Mash Potato, Sauce Paprika
But the star dish has got to be this - El Pulpo – Grilled Octopus leg, “Viola” Mash Potato, Sauce Paprika (S$19). Not on the brunch menu, but you have to try this while you are there. Juicy, smoky and umami - oh, how we all loved this grilled octopus. The purple mash is equally addictive, but the colour combination reminds me, rather cheekily, of Ursula.

Best Churros ever
And you must have the Churros (S$11) - seriously the best churros in Singapore, if I may say so. Delightfully crispy dough sticks dusted with sugar and cinnamon, so good on their own that you almost don't need the rich dark chocolate sauce!

The other dessert that's sinfully good is the Signature Salty Butter Caramel Lava Cake (S$15). The salty caramel version of chocolate lava cake. Swoon! It's the house signature dessert (please allow 15 mins to bake upon order), specially created by Chef Bruno Menard.

Speaking of which, here he is (left) with Group Executive Chef Damien Le Bihan (right), who is from Brittany, France and worked his way through the ranks in Michelin-star restaurants. He joined the Deliciae group from Guy Savoy where he was General Manager.

Marina at Sentosa Cove
We thoroughly enjoyed brunch that day - it was like a mini-vacation in a different country, with sangria in hand, Spanish tapas and breakfast dishes facing the peaceful marina.

However, Sentosa Cove is quite tough to get to, if you don't drive or take a cab. From Beach Station, you can take the free Sentosa Bus 3 to Sentosa Cove Arrival Plaza (there's one every half hour from 8am to 10.30pm).

Also admission fees to Sentosa is reduced to $2 during lunch (12 to 2pm) and dinner (after 5pm) on weekdays. Parking is free at Quayside Isle during lunchtime on weekdays (except Public Holidays) from 16 September to 1 November 2013. Check out the weekday lunchtime promotion too.

FIJI Water Signature Creations Expedition To Raise Money for Children's Cancer Foundation

On 28 September 2013, 12 noon to 6pm, you can hop on a gourmand's road trip across the Tippling Club, Fat Cow, Absinthe, The Pelican, Prive Grill and Hashi. And eat happy knowing it's all for charity.

The FIJI Water Signature Creations Expedition will chauffeur participants in a luxurious coach to each of these restaurants to sample star dishes handpicked by food critics like Wong Ah Yoke (The Straits Times), Marcus Yeo (Lianhe Zaobao) and Evelyn Chen (Zagat Guide, Singapore).

Each signature dish will be paired with a wine and comes with free flow of FIJI Water.

Only 80 seats are available, and tickets can be purchased online ( at S$180 nett. All proceeds from the sale of tickets will be donated to the Children's Cancer Foundation. Together, they hope to donate S$10,000 to support the efforts of the charity.

There will also be an Instagram competition to document the trail. Guests of the expedition can snap photos at each restaurant, and upload onto Instagram with the hashtags #FIJIWaterSignatureCreations, #RESTAURANT_NAME. The contestant with the best expedition album wins dining vouchers and one year's supply of FIJI Water.

Chili's is Breaking Out The Cheese-Crusted Steak and Chicken!

Met up with the Hungrygowhere folks and readers for a very chill evening at Chili's. Man, I have not been to Chili's since they came back to Singapore, and didn't even realise they now have four outlets (Tanglin Mall, The Central, RWS and J-Cube)! Whoa!

We kicked off the evening with the Platinum Presidente Margarita S$16 - made with Tres Generaciones Angejo Tequila, Cointreau Orange Liquer and Brandy garnished with Fresh Lim Sour. (Add S$14 for the shaker) I really liked the extra thick rims of the glasses - great for picking up salt.

Chili's had just rolled out some new items on the menu available from now through 26 November 2013. Diners will enjoy 20% off when they order any 2 new menu items.

Tortilla Chips and Salsa
The tostada chips and housemade salsa are not new, but these are always a treat. Nothing gets an evening started like drinks and some communal snacking. Oh, the salsa dip also comes in useful in one of the dishes below.

OK, the new items are:

Fried Quesadilla Bites

Fried Quesadilla Bites S$11
Flour tortillas stuffed with southwest chicken and cheese. These are battered and fried, and come to you with a serving of chipotle sour cream.

This is crispy on the outside, and with stringy melty cheese on the inside. We also experimented dipping this with the aforementioned salsa. And we found that the tangy tomato dip paired even better with the quesadillas, as the acidity helped to cut through the grease.

Parmesan Chicken with Homestyle Fries and Smoked Potato

Chicken breast crusted with Parmesan and Monterey Jack cheese. Drizzled with chile butter and sprinkled with green onions. Served with choice of two sides (Homestyle Fries and Smoked Potato here).

The chicken breast deserves mention, because when I cut through the meat, it was so tender, I half wondered if we had been served fish instead. It was chicken indeed, but they have a special way of cooking the breast so that it stays tender and juicy. I wanted to find out how, but hmm, it's a trade secret.

Parmesan Chicken with Smoked Sweet Potato and Corn on the Cob
The sides you can choose include the giant yams or sweet potatoes the South is famous for. The Smoked Sweet Potato is really huge, but surprisingly mild in flavour. I loved the Corn on the Cob - it is extra gorgeous and sweet.

Other sides include Jalapeno Mashed Potatoes, Loaded Mashed Potatoes, Broccoli, Rice, and Black Beans.

Bacon & Cheddar Steak

Southwest seasoned steak topped with bacon and melted cheddar cheese. Served with choice of two sides.

What's better than steak? Steak + bacon + cheese! Oh heavens help me! If you like all three, this can be a deadly combination. We had the steak medium well, but it was still nicely pink in the middle.

Cheese bubbling over steak. This smelled really good. It's a hearty chunk of steak too. All of us had to share.

Banana Bread Pudding

Decadent banana bread pudding topped with a scoop of vanilla ice cream, cinnamon, chopped nuts and a caramel drizzle.

My, I never knew Chili's would be good for desserts, but this was such comfort food defined. Soft, warm, moist banana bread with ice cream and caramel plus crunchy nuts. Hands down the favourite dish of the night, despite us being so full from all the heavy dishes earlier.

We all went home very happy after this.

Shangri-La Showcases Young Hawkers in "Hawker Heritage: The Next Chapter" at The Line Buffet

The Shangri-La Singapore is doing something quite remarkable this month - "Hawker Heritage: The Next Chapter" promotion. They've tracked down some of the most interesting young hawkers taking up the the challenge of this tiring trade. Nine hawkers from six establishments will present their dishes at The Line (photo above courtesy of Shangri-La) on 21 and 28 September 2013.

We are acutely aware that old hawker masters are passing on, and few youngsters are keen to take up or continue the trade. So it's encouraging to meet examples that inspire hope in the hawker future.

Daniel Wang, the former Commissioner of Public Health/Director of Public Health, will also talk at 6pm about the history of hawker centres in Singapore. He would know, because he was the one who made it happen.

Here's a quick introduction to the six eateries you'll see as part of the regular 16 live stations at The Line. The hotel took media on a whirlwind tour of all the places in one day. Great fun. I'm using my Instagram photos here.

Sweet Spot Deli at Marina Bay Sands: Awesome New York Style Deli Sandwiches Right Here!

UPDATE 10 Aug 2014: Sweet Spot Deli at The Shoppes side is giving up its space, but you can still find some of the sandwiches at Sweet Spot over at the hotel side (Tower 3). I guess it makes sense to consolidate. 

Pastrami, Swiss cheese, coleslaw and Russian dressing on grilled rye

Oh corned beef or pastrami piled high on gorgeously grilled rye -- this hits the spot all right. Marina Bay Sands' latest F&B venture, the Sweet Spot Deli, will be just the place to go when you're craving New York style deli sandwiches.

I raved about this place on radio a couple weeks back (I do the Foodie Lunch Pick on 93.8Live Mondays). The sandwiches at first looked hefty, but are so tasty, I inhaled them in no time.

The Large and the Regular portions for comparison - almost double the filling?
When they first launched, the portions of the sandwiches were deemed too big, according to local diners. So Sweet Spot Deli had to introduce two sizes - the original large (110g, left in photo) and a smaller regular (70g, right). Prices are very reasonable, at S$6-9 for regular and S$10-14 for large.

Lemon Meringue Pie

They have the staples - lox and bagel, albacore tuna salad on rustic bread, and even chicken matzo balls. Desserts include New York cheesecakes, Devil's Food Chocolate Cake and a wicked looking Lemon Meringue Pie.

Granted, the place lacks the atmosphere of a real deli - it looks more like a casual and contemporary coffee joint - but the food, oh the food. I'll be back for more.

NOX: Dining in the Dark? It Can Be More Touching Than You Think

Yes, eating in absolute pitch darkness. It's humbling. And totally exhilarating.

NOX, Latin for "night", is bringing a popular dining trend in the West to Singapore. This may or may not be new here, but the restaurant is wholly dedicated to turbo-boosting your entire experience by removing the element of sight, upon which we are so reliant. So your other senses -- smell, touch, hearing -- come to the forefront, totally augmented, in ways that give you newfound appreciation of every bite.

For our group, it was a very touching experience too (hey no, we did not molest anyone). There was an unexpected and unintended surprise that really warmed our hearts, not just our bellies:

St Regis Brasserie Les Saveurs Has New French Chef and Menu; SPG Triple Benefits and Starwood Hotel 3D2N Holiday Giveaway!

Hey guys, this is going to be a busy post - three items in one! All related to the Starwood Group.

1) Introducing the new French brasserie dishes at St Regis Singapore, specially added to the menu

Let me start with the food - there's now more reason than ever to head to Brasserie Les Saveurs at St Regis Singapore. No, not just because the new chef is eye candy (some have commented he looks like the French version of Christopher Reeves), but because the menu has got classic French dishes, done with modern flair.

UPDATE 2015: this chef has left, and most of the dishes have changed.

The amuse bouche we had (right, iPhone Instagram shot) is hearty and addictive - potato and soy espuma with grilled wagyu tenderloin on skewer. The light savoury concoction is so tasty when mopped up with the rustic starter bread too. Gosh, I hope they make this a regular amuse bouche, the way L'Atelier de Joel Robuchon keeps its parmesan foam and foie gras starter. Please?

Salade Niçoise

Black-pepper-seared yellow fin tuna, mesclun leaves, quail eggs, marinated anchovies, green beans, and Kalamata olives.

This is a really hearty portion, and truly a meal on its own. Crisp greens paired with what seems to be sashimi grade tuna seared just lightly on the outside.

Fisherman's seafood stew slow-simmered with fennel and saffron.

If you love seafood, you'll like the rich stock here that's been reduced to a potent broth. Adorned with mussels, squid, clams, fish, shrimp, this classic French soup is satisfyingly comforting here. It's served with a wicked aioli and toast (background).

Boston lobster flamed with cognac, mushroom béchamel sauce and gratinée gruyere

Decadence on a plate. The lobster' body is buried under a mountain of creamy cheesy goodness with diced mushrooms, and the large claws are battered and fried. We had no room for the few pieces of greens.

But to prime rib...we could not say no.

Here's the chef carving the incredible Côte De Boeuf from the Gueridon Trolley. You can indicate what doneness you prefer, and he will select the portion to match.

Good golly, this is so good even when you are already full! Yes, once in a while, you have to give yourself a treat.

A light and non-fussy dessert - the banana mousse cake is sponge-like and goes perfectly with the ice cream.

Service at the St Regis is also heartwarming. When I joked that I needed both coffee and tea, the staff offered to make me a "yuanyang" (coffee-tea mixed drink popular in Hong Kong cafes). Voila! A French-style iced tea-coffee.

New Menu as nydc Goes Back to New York Roots; See 18th Birthday Promos Too!

"I Scream" Burger - what a way to have ice cream!

nydc has revamped its menu and is celebrating its 18th birthday!

They've always been known for their iconic mudpies and cheesecakes. The new menu emphasizes desserts even more so. In fact, the menu STARTS with dessert items. Yes, we often joke, "Life is short; eat dessert first!" So this post will also showcase the desserts upfront.

The menu now has 30 desserts and 20 hot food items - more desserts than food! It certainly does justice to the friendly eatery's name - New York Dessert Café - but that's not all. What's great is the food selection has made a return to New York staples, as you'll see. It's always good to come back to your roots, no?

Now then, dessert! Let's kick off with this glorious thing above - the I Scream Burger! (S$9.80)! Three lovely scoops of ice cream in a brioche bun topped with red, white and blue stars, plus whipped cream and chocolate crumble.

I just love how festive and fourth of July this looks. The brioche bread which is nicely toasted golden brown totally complements the ice cream. It's also comfortingly familiar....remember our own ice cream "roti"? Bread and ice cream. Yeah, can we have more carb please?

Interestingly, a lot of guys order this. Must be the word "Burger"...

Peanut Butter Crunch Time
Peanut Butter Crunch Time (S$6.80) is my personal favourite of the new items. It's a variation of bread and butter pudding, but with crunchy toast and peanut butter in the mixture (gosh, why I didn't I think of that for my own bakes?) topped with a scoop of vanilla ice cream with lashings of caramel. Where's the "Like" button?

Let's Get Berry High
Let's Get Berry High (S$9.80) - wild berries soaked in red wine with a dollop of yoghurt sorbet. For those who prefer more fruit and less fat in their dessert, but yet not something less potent.

And now for the savoury stuff! Small Plates start from S$5.80 and Big Plates from S$12.80. Instead of calling them appetisers and mains, you can mix and match big or small plate meals however you like. Sharing is encouraged, so that you'll have room for dessert.

Let's start with the Small Plates!

Hookin' Brooklyn Chicks

This one is special, because they've gone back to the authentic recipe using hot sauce instead of barbecue sauce like most other joints. So the chicken drumlets are really tangy and spicy, instead of cloyingly sweet. Awesome! Served with vegetable sticks and a blue cheese dip. You'll welcome these to cool the sizzle.

If you prefer something less spicy, they've got Saucy Southern Chicks, sprinkled with Cajun spices and served with a BBQ dip.

Mushroom Munchies

Button mushrooms, ham, garlic mayo and mozzarella all melted together for savoury mayhem. One is never enough.

Lolli Pork Ribs
Lolli Pork Ribs (S$9.80, 4 pcs) - a mini rack of Spanish baked pork ribs marinated in candied cocoa sauce, and chocolate soil. These remind me of the zi char coffee ribs, but are much more potent!

Cut The Crab - Crab Cakes

These are bagedil sized crab cakes nicely deep-fried, but what's interesting is the peanut butter chili sauce. I was wishing for more of the sauce!

And now for the BIG PLATES. These might be great for sharing, but some are so tasty you might not want to!

Double Beef Booster - corned beef and pastrami in one!

Can't decide between corned beef and pastrami? Have them both in one sandwich! With sauerkraut, melted cheese and Russian dressing between slices of buttered toasted rye bread. This New York deli staple is made twice as tasty with both ingredients, but it isn't too heavy still. It's all balanced with a side of mesclun salad which also comes with a slice of pickle.

This is a whopper of a sandwich. While digging in, I thought I'd never see the end of the succulent pulled pork which seemed to multiply the more you carved into it. Nicely done with BBQ sauce, coleslaw, and romaine leaves.

Turkish bread, marbled sirloin steak, guacamole, aioli, caramelised onion, shredded romaine lettuce. This is a meaty monster topped with grilled cheese. It's a meal all its own.

Sloppy Joe

What's more American than sloppy joes? This is sheer comfort food in the form of minced beef stew topped with melted mozzarella on a butter roll with coleslaw and lettuce, plus a mesclun salad side.

Good Ol' Fish and Chips - using hake, not Pacific dory
Good Ol' Fish and Chips (S$15.80) - using hake, not Pacific dory, for the battered white fish. You can taste the difference. This is one of their bestsellers, and it's easy to see why. I really like the rough hewn surface of the chips that are fried with skin on.

Sunny Grooves, Munchy Moves - sausages and eggs with potato
Sunny Grooves, Munchy Moves (S$15.80) 
Oh I love this one - glorious pork and cheese sausages with an egg sunny side up, all drenched in shallot sauce. What the chef decided to do with the potato was simply serve it boiled and crushed without further seasoning, because the sausages are already pretty salty. So it all balances out well. But beware, the cheese sausage squirts too, so watch out when you carve into it!

Aiolli L'Amour
Aiolli L'Amour (S$5.80)
This is part of the Small Plates, but makes a great side dish to share with the mains. The fries come with a nice dusting of Cajun spices and a rich aioli dip. Eat fast or portion them out, for they might get soggy steaming away in the bucket. These are easy to eat, but I personally prefer the simply salted chips served with the Fish and Chips - somehow those still taste crisp and great even when they're cold.

Oh did I mention the new menu now has 40 drinks? The familiar favourites are still there - the huge Elephanccinos, shakes and freezes, floats and coolers, and some creative takes on lemonade.

Creative takes on Lemonade - Cool Cucumber-Aid and So Berry Merry

There are five kinds of Lemonades (S$4.20 per glass; S$8.50 per pitcher) - pictured here are Cool Cucumber-Aid (left) which features Japanese kyuri (cucumber) with orange juice and lemonade; and So Berry Merry with cranberry, orange juice and lemonade. On a hot day (which is so often in Singapore), these are a godsend.

There's lots more in the new menu to check out. Even kids are not left out (there are four meal sets just for them) - ham and cheese macaroni, fish nuggets, tomato pasta, scrambled eggs and cheese sausage.

Dessert galore - love the red velvet cake
So, order dessert first and then plan your main meal around it! The trouble is....with 30 desserts, it's hard to pick just one! So share a variety with friends or take some home. I really like the Red Velvet Cake - addictively smooth and not too sweet. The "We Like To Mousse It, Mousse It" mango mousse (the orange dessert in the background) is also wonderful.

Apart from traditional favourites like brownies, apple crumble, and cookies, there are creamy cheesecakes, chocolate confections, and fun mudpies galore. Mudpies - gotta love the "Jedi Mudster" which reminds me of an Imperial star destroyer, and the "Bring Me To The Dark Side" chocolate indulgence which would floor even Vader. I'm a sucker for Star Wars anything.

The vibe at nydc is still casual, cosy and unpretentious. And with so many great desserts and tasty treats that are easy on the wallet, it's a very likeable place to celebrate life as often as you like, with family and friends.
