CNY 2021: Wan Hao Chinese Restaurant at Singapore Marriott Tangs Plaza


Wan Hao Chinese Restaurant at Singapore Marriott Tangs Plaza has always been known for exquisite Cantonese fare. Executive Chinese Chef Brian Wong Shiuh Yean dazzles with thoughtful culinary creations and spares no effort to fashion the best out of fine ingredients.  

Their Chinese New Year menu for 2021 offers eight-course set menus from S$108++ per person (4-8 pax) to S$2088++ (per table of 8 pax) from 20 January to 26 February 2021. New Year Eve Reunion menus on 11 Feb 2021 are from S$118++ per person. There are also Lunar New Year a la carte delicacies and takeaway offerings. Here are some of the highlights you can expect.

Boston Lobster and Caviar Yu Sheng with Crispy Fish Skin (鱼子酱波士顿龙虾捞起, Large: S$188++, Small: S$108++);

The lobster is cooked, so no one has to worry about raw food contamination. It's lovely paired with caviar and passionfruit pearls. You have a choice of traditional or Mandarin orange sauce. We tossed the yusheng wearing masks. No loud shouting but auspicious blessings were recited and received.

There are actually six different yusheng available at Wan Hao this year. Toss to an auspicious year with choices such as: 

  • Lobster, Scallop, Salmon, Tuna, Caviar & Crispy Fish Skin Yu Sheng (至尊鱼生捞起) (Large: S$268++); 
  • Boston Lobster (Cooked) & Caviar Yu Sheng (鱼子酱波士顿龙虾捞起) (Large: S$188++, Small: S$108++); 
  • Mini Abalone & Crispy Fish Skin Yu Sheng (千孙鲍鱼捞起) (Large: S$158++, Small: S$88++); 
  • Smoked Duck Breast & Crispy Fish Skin Yu Sheng (熏鸭胸捞) (Large: S$128++, Small: S$68++); 
  • Pear & Avocado Vegetarian Yu Sheng (雪梨养身鱼生) (Large: S$128++, Small: S$68++)

Crispy Pork Trotter with Fermented Red Rice Sauce (香糟汁伴金沙熏元蹄, )

This continues the stellar work that Wan Hao does on pork trotters. The pork goes through quite a lot of work - boiled, braised and then deep-fried for the crispy effect. The fermented red rice sauce brings an old school touch to this dish; it may be an acquired taste but I found the pork trotter already so tasty on its own.

Wan Hao Eight Treasures Imperial Pot with Bird’s Nest (贵妃煲, S$788++/6 persons)

New this year is the Eight Treasures Imperial Pot which is a different take on the usual darker braised pen cai. This collagen-rich superior broth is packed with nutritional goodness and premium ingredients: Bird’s Nest, 10-Head Australian Abalone, Fish Maw, Dace Fish Beancurd Bag, Live Prawns, Pork Tendons, Chicken and Japanese Shiitake Mushroom. 




CNY 2021 at Wan HaoThe milky white broth derives nourishing goodness from chicken feet, old fowl, pork skin, and more, boiled for hours. I do like this light version, but if you prefer the more traditional one, the Wan Hao Imperial Pot of Prosperity Pen Cai with Australian 3-Head Abalone & Goose Feet 盆满钵满 (黄金盆菜) ($688++/6 persons) / (S$1088++/8 to 10 persons) is still available.

Braised Giant Prawn with Salted Egg Cream Sauce (金沙奶油煎大海虾)

This is a popular classic executed perfectly. A supersized fat juicy prawn fried just right and doused with delicious salted egg cream sauce (I know, salted egg is overdone but I still like it, and so do many others). The shell is so crispy you can just crunch through and eat it as well (extra calcium)!

Water Chestnut Puree with Hashima 

Golden Nian Gao Tart with Purple Sweet Potato ($32nett/ 8 pieces) or Japanese Red Bean ($28nett/ 8 pieces)

Black Sesame Glutinous Rice Ball with Pistachio

The water chestnut dessert has crunchy bits of water chestnut in the puree which add lovely contrast to the luxurious hashima snow frog "jelly". I really love the "nian gao" tartlets with a yam or sweet potato base. They also have the original cempedak and yam base varieties. Meanwhile, the glutinous rice ball is a mochi delight filled with sweet black sesame, and enhanced with a nutty pistachio coating.
