Marina Bay Sands RISE Dinner Buffet: Sustainable Produce and Themed Nights

Marina Bay Sands’ international buffet restaurant, RISE, revamped itself earlier this year, featuring not only refreshed interiors but a new culinary focus on sustainably-sourced produce and a different theme each night.

Here's a quick walkthrough of the food at the buffet during one of the Thursday dinners.

Seafood counters right upfront
Eight open-concept kitchens bring diners on a journey through global cuisines, before paying homage to Singapore’s heritage through timeless classics. “Live” cooking stations – from pasta counters to meat carving areas – enhance up the dining experience, while the Bar offers a large selection of wines (including organic varieties), cocktails and juices. A new ‘live’ grill station has been added to dinner service every night, featuring grilled satay, fish and barbeque short ribs. Diners can also look forward to a rotating line-up of smoked meats every day.

RISE is also going big on sustainability, which is commendable. Ingredients are sourced from responsible farmers locally and in the region, while recycled or sustainable materials are used for everything from placemats to table settings. All glass, paper, cardboard and plastic materials will be recycled, and food waste collected and broken down into waste water, minimizing the amount of solid waste that goes into landfills.

Herb Garden

RISE has its own herb garden
Just outside the dining area is an extensive outdoor Herb Garden with over 50 types of herbs. The herbs not only are used in the kitchen but have inspired creations of cocktail and mocktails at the enhanced Bar.

The herbs from the garden are used as tabletop centerpieces
Trimmings from the herb garden also lend fresh and aromatic interest as table centerpieces. It's a nice change from flowers, and good use of something that would otherwise have gone to waste.

Soda Station

The soda station is really fun
What we really liked was the brand-new soda station where you can create your own sodas using fresh herbs such as rosemary and thyme, pairing them with fresh fruits, juices and homemade syrups.

The Pandan and Gula Melaka syrups are exceptionally fragrant.

It is so fun concocting your own sodas flavoured with your favourite fruits and syrups.

Signature Dishes

There are five signature items on the menu specially made with sustainably-sourced produce. These signature dishes will be on the buffet line every day.

Ayam Percik in Tangy Peanut Sauce
These include the Ayam Percik in Tangy Peanut Sauce (Malay grilled chicken), a Javanese dish consisting of candlenut, turmeric and fresh herbs from the herb garden. Locally sourced hormone-free Sakura chicken is marinated for 24 hours before being grilled right in the backyard of RISE.

Barramundi baked in salt crust
The Baked Salt Crust Sustainable Barramundi is a sustainably-sourced fish baked in a crust of salt, dill, lemon, fennel and coriander seeds. The dish uses locally sourced Kuhlbarra Barramundi that is also hormone-free and antibiotic-free.

BBQ Beef Brisket
The Home Smoked BBQ Beef Brisket features hormone-free beef from Australia and is marinated with RISE’s special rub and fresh herbs before being cooked over a smoker in the backyard.

Chili Crab
Of course, the buffet would not be complete without the Singapore Chili Crab! RISE has its own secret sweet and spicy chili sauce, which you can enjoy with the fried mantou.

Cakes section
There's even a signature dessert - the Cream Cheese Frosted Banana Cake - that they have never been able to take off the menu because regulars keep asking for it.

To make things even more interesting, every evening is a celebration of different international cuisines as RISE presents the best selection from each culture.

Lovely meringue and candies
RISE’s culinary team is helmed by its executive chef William Tan, formerly from Sky on 57 at Marina Bay Sands. William has over 20 years of culinary experience and specializes in modern European and Asian cuisines. He is a two-time winner at the prestigious Bocuse d’Or Singapore in 2010 and 2007 and represented Singapore on the world culinary stage at the Salon Culinaire Mondial in Switzerland in 2013, and the Restaurant of Champions in Western Australia in 2011.

RISE has revamped
The revamped interiors bears a new colour palette reflecting nature - hues of emerald blue, jade green, light ash timber and a touch of elegance with bronze.
Like an indoor garden, the soothing tones and contemporary interiors blend seamlessly with the canopy of giant indoor trees housed in stoneware ceramic vases. You'll notice they take inspiration from Rising Forest, the art installation of potted trees by renowned sculptor Zheng Chongbin that line the hotel atrium.

The interior, furniture and accessories are designed in flowing and curvilinear forms using natural materials. An undulating timber screen, inspired by flowing rivers, is created to give privacy to guests.

Cold cuts and antipasti
Hand-made tiles on the buffet counters facade are a reference to the rattan weaving techniques that pays homage to Southeast Asian culture. Dark-stained sustainable bamboo flooring is also used to depict earth and nature, while sculptural lightings around the restaurant resemble the shapes of trees and branches.

All in all, it's a gorgeous place to spend a few hours indulging in good bites and drinks. RISE restaurant is open for breakfast, lunch and dinner daily.
